How to Make Tea Sandwiches

I just got back from London and there is nowhere else in the world that inspires me more to go for an afternoon than that beautiful place. 

So for today's post I am sharing a "how to" post all about tea sandwiches! The perfect treat to pair with sweets!

These small sandwiches are made to be eaten in 2-3 bites and are super versatile in their fillings. Below are some staples that will help you elevate tea time at home with friends!

 

 

Cucumber sandwiches are light and refreshing treats that are so easy to make. They actually are my favorite kind of tea sandwich.

Recipe Details

Prep time: 15 minutes

Cook time: 0 minutes

Total time: 15 minutes

Servings: 30 cucumber tea sandwiches

 

Ingredients
  • 8 ounces cream cheese (softened)
  • 3 tablespoons mayonnaise
  • 2 teaspoons fresh dill (chopped)
  • 1 teaspoon fresh chives (chopped)
  • ¼ teaspoon garlic powder
  • Salt & pepper (to taste)
  • 1 long English cucumber (thinly sliced)
  • 1 loaf sliced bread (crusts removed)

 

Directions
  1. Use a hand mixer to mix cream cheese and mayonnaise in a small bowl until smooth. Stir in herbs, garlic powder and salt and pepper to taste.
  2. Spread bread slices with cream cheese mixture.
  3. Thinly slice cucumbers. Layer thin cucumbers over half of the bread slices. Top with additional herbs if desired.
  4. Top with remaining bread slices, remove crusts and cut each sandwich into 3 rectangular pieces
  5. Serve immediately or cover and store in the refrigerator for up to 24 hours.

The next are Egg Salad Tea Sandwiches which are common at most afternoon teas in the United States. 



 

 

Recipe Details

Prep time: 12 minutes

Cook time: 0 minutes

Total time: 12 minutes

Servings: 8 tea sandwiches

 

Ingredients
  • 2 eggs (hard-boiled, chilled after boiling to prevent green yolks)
  • 1 tablespoon mayo or mayo alternative
  • 1 tablespoon plain yogurt
  • 1 tablespoon dijon mustard
  • 1 teaspoon dill (chopped or dried)
  • 1 teaspoon fresh parsley (chopped)
  • Sea-salt (to taste)
  • Freshly ground black pepper (to taste)
  • 4 slices of bread

 

Directions
  1. Mash the eggs, mayo, yogurt, and mustard with a potato masher or a fork.
  2. Stir in the herbs and spices.
  3. Spread the egg salad onto two slices of bread.
  4. Top the egg salad with the remaining two slices of bread.
  5. Remove the crusts and slice the sandwiches two times, diagonally, to make four tea sandwiches from each large sandwich.

And lastly Ham and Cheese! I don't do these much but I hear they are a must try!

Servings: 8 tea sandwiches

 

Ingredients
  • Honey mustard
  • 16 slices very thin whole wheat or white bread
  • 8 to 10 ounces very soft Brie (room temperature)
  • 8 thin slices ham (about 4 ounces)l
  • Unsalted butter (softened)
  • Toasted sesame seeds (garnish)

 

Directions
  1. Spread a very thin layer of honey mustard on 8 slices of bread. Then spread a thin layer of Brie over the mustard, and top each slice with 1 piece of ham.
  2. Spread a thin layer of Brie on the 8 remaining slices of bread, then place each cheese side down, over a slice of ham-topped bread.
  3. Carefully trim off the crusts. Slice each sandwich in half diagonally, and then in half again. Each large sandwich makes 4 triangular tea sandwiches.
  4. Lightly butter one edge of each sandwich, and dip that edge into a dish of sesame seeds. Garnish remaining sandwiches.
